No bread, no problem, No mayo, no problem!
Avocados were on sale last week, and I bought a few, still green. It takes me a few days to dream up what I want to do with them. By then, they are nice and ripe. This is probably the last time you’ll get cheap tomatoes for the year. We’ll see.
1 can of water packed tuna
1 hard boiled egg
1 avocado, cubed
1 tomato, seeds removed and diced
1/2 small red onion, chopped
1 teaspoon mustard powder or prepared mustard
1/4 cup olive oil
juice from 1/4 lemon
salt and pepper
the best leaves from your head of Napa Cabbage, or use lettuce leaves if that’s what you have.
Mix together your mustard, oil, lemon juice, salt and pepper. Set aside. Combine your tuna, boiled egg, avocado, tomato, onion in a bowl, Pour over your dressing, toss to coat and served inside the leaves from your cabbage or lettuce.
Serves two. Easily doubled.
