I had alot of pears that I couldn’t get to right away and they softened too much to be eaten fresh. They were perfect for this recipe though. Add your favorite (homemade) frilly coffee (or tea) drink, and you won’t even need to go by Starbucks!
2 cups flour
1 teaspoon baking powder
1/2 teaspoon of:
1/4 cup oil
about 1-1/2 cups of pureed pears (I used 2 medium pears)
1 teaspoon vanilla extract
1/4 cup molasses
Preheat oven 350 degrees F.
Sift together all of your dry ingredients into a bowl. Set aside. Mix together all your wet ingredients, except the molasses. Add your wet ingredients to your dry ingredients and mix until just combined, no dry streaks! Pour about 1/2 cup of your batter in another small measuring cup and stir in the molasses. Fill your prepared muffin tin (greased or lined) with the light colored batter, then top off with the darker batter. Make swirls with a knife.
Bake for about 25-30 or until tooth pick or knife comes out clean.
